Abstract: The article is concerned with the development of the world fish oil market, a product of not great significance in terms of production volume, but very important for maintaining human health. Definitions of fish oil, the main sources of its production in the world and information on omega 3 fatty acids content in fish and seafood, plant and animal food as well are presented. Various areas of fish oil use are considered, with an emphasis on its dietary and medical characteristics. Technological schemes of fatty fish processing and production of fish oil on their basis are demonstrated. The dynamics of fish oil market development including production, international trade (export, import) and domestic consumption globally and in leading countries and regions are shown. Historical and future impact of fish oil world prices, global fish oil ending stocks as well as other factors (nutritional, demographic et. al) for export and domestic consumption of this product is analyzed. The development of the global fish oil market in the context of various factors of influence is given. Russia’s position in the world fish oil market in the context of key issues of the domestic fishing industry development are determined.
