Abstract: The article examines the possibility of using digital financial assets to finance the development of dairy processing and the production of high-protein dairy products. The research problem is determined by the need of agro-industrial enterprises for long-term and flexible capital sources, while bank loans, subsidies and internal funds do not always support modernization of processing facilities and production with higher added value. The purpose of the study is to substantiate the possibility of using digital financial assets as a financing instrument for the development of high-protein dairy products in the dairy industry. The methodology includes analysis of scientific literature, analysis of the regulatory framework for digital financial assets, review of analytical materials on digital finance, comparative analysis of financing instruments and logical structural modelling. The results identify prerequisites for the use of digital financial assets in the dairy industry, compare digital financial assets with bank loans, subsidies and bond financing, and propose a conceptual model of issuance linked to monetary claims or verifiable cash flows from product sales. The conclusion is that digital financial assets may be used only as an additional financing instrument. Their applicability depends on disclosure quality, issuer stability, legal certainty, production and market risk assessment, and the investor’s ability to understand the connection between return and project economic performance.
